Low Calorie Salad Dressing

1 cucumber
1 tsp.  honey
1 tsp. dry mustard
1/4 tsp. dried tarragon
1 tbs. minced parsley
3 tbs. balsamic vinegar (or lemon juice or flavored vinegar)
4 tbs. olive oil
1 egg white
2 tsp. minced garlic

Peel cucumber and puree in a food processor, blend in other ingredients. This dressing can be kept in an air-tight container, under refrigeration for a few days. Best if eaten fresh.  Shake before using.
