Low-Fat Cucumber Dressing
1/2 cup low-fat cottage cheese
1 tbs. yogurt
1 tbs. honey
1 tsp. lemon juice
1 clove garlic, minced
2 tblsps. minced scallions
1 cup finely chopped cucumber
1/2 tsp. white pepper
Place yogurt, honey, lemon juice, cottage cheese (with excess liquid drained), pepper and garlic together in a food processor and puree. Add the cucumber and scallions and mix them in with a whip by hand.
