Pepper Chicken

1 green pepper cut into 1 inch pieces
1 tomato cut into wedges
1 onion cut into  1-inch pieces
2 boneless, skinless chicken breasts cut into 1-inch cubes
1 tbs. grated ginger
1 clove garlic
1 tsp. sesame oil
1 tbs. peanut oil
1/4 cup soy sauce
1 tbs. arrowroot

Heat the oil; add ginger and garlic.  Cook chicken and remove.  Cook onion and green pepper until tender, add tomato.  Cook for 2 minutes; add the cooked chicken.  Mix soy sauce with arrowroot in a cup and add to mixture.  Heat, stir and serve over brown rice.
