Quinoa
This is a tasty side dish or breakfast food. It can be used instead of potatoes or rice. It is a complete protein. Rinse it thoroughly before cooking. Simply boil one cup of quinoa with two cups of water and a little salt for about 15-20 minutes. If you having it for breakfast, cook it with some cut-up fruit. If you are having it for a side dish, dice some onion or green pepper and cook it with the quinoa.
