Stir Fry

1 cup fresh mushrooms, sliced thin
1 pound fresh shrimp, shelled and deveined or cubed pieces of chicken breast meat
1/2 cup chicken broth
1 tbs. arrowroot
1/4 cup soy sauce
1 1/2  tbs. peanut oil
1/2 tbs. sesame oil
1 clove minced garlic
2 tsp. grated fresh ginger
1 cup peeled broccoli, cut in small pieces
2 cups chopped bok choy
1 cup fresh pea pods
1 cup fresh bean sprouts

Preheat a wok over high heat; add oil.  Stir fry garlic and ginger in hot oil for 30 seconds. Add broccoli, fry for 3 minutes.  Add bok choy, pea pods, mushrooms and bean sprouts.  Stir fry 2 minutes, until vegetables are crisp and tender.  Remove vegetables, place shrimp (or chicken) in wok.  Stir fry 7-8 minutes, until done.  Mix chicken broth, arrowroot and soy sauce together, add to wok with shrimp (or chicken).  Add cooked vegetables, stir fry for 1 minute.  Serve over brown rice.
